While we are strong believers that wine is made in the vineyard rather than in the cellar, vinification remains a magical moment—a moment of truth. All year long, we imagine the profile of each parcel’s wine, dreaming of the unique melody of every cuvée. It is only once in the cellar that the instruments reveal themselves. It is then up to us to decide whether we try to write Sympathy for the Devil by The Rolling Stones or Summer by Antonio Vivaldi. What is certain is that a symphony orchestra playing rock is, at best, amusing—and a Stratocaster taking on classical pieces can be painful to the ears.
