While we are strong believers that wine is made in the vineyard rather than in the cellar, vinification remains a magical moment\u2014a moment of truth. All year long, we imagine the profile of each parcel\u2019s wine, dreaming of the unique melody of every cuv\u00e9e. It is only once in the cellar that the instruments reveal themselves. It is then up to us to decide whether we try to write Sympathy for the Devil by The Rolling Stones or Summer by Antonio Vivaldi. What is certain is that a symphony orchestra playing rock is, at best, amusing\u2014and a Stratocaster taking on classical pieces can be painful to the ears.
